Mediterranean chopped salad
Dressing:
- Four parts EVOO to one part vinegar (champagne vinegar, red wine vinegar, white wine vinegar, sherry vinegar, balsamic vinegar, or a combination of any of the above will all produce excellent results)
- 1 TBSP spicy brown mustard
- Pinch of salt
- Pinch of pepper
Whisk ingredients until dressing emulsifies. Season to taste.
Salad:
- 1 head of romaine lettuce roughly chopped
- ½ can of drained chickpeas roughly chopped
- 3-ounces high-quality salami thinly sliced into strips
- Handful of fresh basil leaves roughly chopped
Combine all ingredients with 3 – 4 TBSP of dressing depending on how much you like. Mix until well coated and garnish with crumbled feta cheese.
Fennel, Endive and Radicchio Salad
Dressing:
- Four parts EVOO to one part vinegar (champagne vinegar, red wine vinegar, white wine vinegar, sherry vinegar, balsamic vinegar, or a combination of any of the above will all produce excellent results)
- 1 TBSP spicy brown mustard
- Pinch of salt
- Pinch of pepper
Whisk ingredients until dressing emulsifies. Season to taste.
Salad:
- ½ fennel bulb thinly sliced w/ tops removed*
- 2 small endives finely chopped (both red and white endives are equally delicious)
- ¼ head radicchio thinly sliced
- ¼ cup roughly chopped Maracona Almonds
- 2-3 TBSP dried currants
Combine all ingredients and toss w/ 3-4 TBSP of dressing. Top with grated Parmesan Cheese, black pepper and a drizzle of white truffle oil or EVOO.
